angel food cake is probably the cake that i missed the most. i’m not a big eater of eggs, so i find the prospect of a dozen leftover egg yolks daunting. of course extra yolks usually become chocolate pots de crème or frozen custard. after lots of hand wringing,  i decided to try dried egg whites instead of fresh.  i’m pretty happy with the result.

a gift of some gluten free ladyfingers, the day before a dinner party, inspired me to make a chocolate tiramisu for dessert. the gluten free cookies need to soak for a very long time in the espresso before they are soft enough.
